Rabbit Scallopini

This recipe makes use of bunny bellies (or tenderized rabbit meat). Ideally serve this with spaghetti and tomato sauce. Preparation time: 30 minutes, Cooking time, 7 minutes. Serves 4.

450 g rabbit loin and hind leg meat 1 pound
or rabbit belly flaps
230 mL all-purpose flour 1 cup
5 mL salt 1 tsp
2 eggs 2
30 mL water 2 tbsp

Rabbit Recipe: Hasenpfeffer Rabbit

Salt water
1 Onion
12 Cloves
Equal parts butter and lard
Little cinnamon
1 tb Vinegar
More flour

tender, remove from pot, roll in flour and fry in

Man-Made Rabbit Breeding Burrows

          There have been a number of visitors in recent months ask what the strange looking mounds and tiles were doing in my starting pen. Previous articles have discussed how I design my brush piles and small dens, but I haven’t ever talked about the burrows many of my rabbits use to whelp their litters. This article will describe the larger burrows where rabbits can survive cold winter weather as well as raise their young.
